Rhubarb Pie ( for deep dish pie)

2 1/2 cups chopped rhubarb
3 eggs
1 1/2 cups sugar (this is if you have strawberry rhubarb, if you have the green rhubarb, you will have to use 2 cups of sugar)
15 crushed soda crackers

Mix rhubarb, eggs and sugar.  Let sit for about 1/2 hour to help the sugar to dissolve.  Add the crackers and pour into unbaked pie crust.  Cut hard butter into thin slices and put on top of pie before baking.  Bake at 350 degrees for about 1 hour.  Your soda crackers will come to the top as it is baked to form a crust.



An alternative topping would be:

1/2 cup sugar
1/2 cup flour
1/2 cup butter
1 pinch salt

Mix it all together until it is crumbly.  Sprinkle it on top of the pie and bake. 
I don’t think you need to put the butter on top of that either.

Apple Crisp

Apple Crisp

8 cups apples
2 cups sugar
2 TBSP flour
2 tsp cinnamon
1 tsp salt

Mix together and place in 9x13 pan.

Topping:

1 cup brown sugar
1 1/2 cups flour
1 cup oatmeal
1 cup butter

This recipe actually started as a rhubarb crisp recipe.

Mix until crumbly.  Sprinkle over apples.  Bake at 350 degrees for 45 minutes.

Pumpkin Bars

Pumpkin Bars

4 eggs
1 cup oil
2 cups sugar
2 cups pumpkin
2 cups flour
2 tsp baking powder
1 tsp soda
1/2 tsp salt
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp ginger
2 tsp cinnamon

Beat eggs.  Add oil, sugar and pumpkin.  Mix well.  Blend all other dry ingredients together and add to the egg mixture.  Mix well.  Pour into greased and floured 9x13 pan.  Bake at 350 degrees for 25-30 minutes.

Frosting

1-8oz cream cheese
3/4 cup butter
1 TBSP milk
1 tsp vanilla
4 cups powdered sugar

Mix well an spread onto bars.

Sugar Cookies

Sugar Cookies 1 egg 1 cup shortening (1/2 Cisco - 1/2 butter) 1 cup powdered sugar 1 tsp vanilla 1/2 tsp cream of tartar 1/4 tsp salt 1/2 tsp soda 2 cups flour Beat the egg. Add the vanilla. Add the shortening and powdered sugar. Mix the cream of tartar, salt and soda with the flour and stir until well blended. Mix with the egg mixture. Refridgerating the dough helps when making the balls. Roll into balls and roll in sugar. Place on parchment paper on cookie sheet. Flatten. (I use an old meat grinder to get a checkered pattern.) Bake at 350 degrees until light golden in color. Cool slightly before removing from pans.

2 cups sugar
2 cups flour
3 tsp cinnamon
2 tsp soda
1/4 tsp salt
4 cups diced apples
1 cup nuts

Beat eggs.  Add vanilla and sugar and mix well.  Blend the rest of the dry ingredients together and add to the egg mixture.  Add the apples and nuts.  Pour into 9x13 greases and floured pan.  Bake at 350 degrees for 40-35 minutes.

You can also use rhubarb instead of apples.

Frosting

1 beaten egg
1/2 cup brown sugar
3 TBSP butter

Boil 1 minute, stirring constantly (it burns easy).  Cool completely.  Fold in 1 quart of cool whip.  Put on cake.  Store in fridge.

Crunchy Onion Chicken Noodle Dinner

1 can cream of chicken soup
1 1/4 cups milk
2 cups French fried onions
2 cups cubed cooked chicken or turkey
1 1/2 cups shredded cheddar cheese


Stir all ingredients together except for 1 cup of the onions and 1 cup of the cheese.  Bake at 400 degrees for 30-40 minutes.  Stir and add the remaining onions and cheese.  Bake 5 minutes longer until the onions are golden.
