My Quick and Easy Vegetarian Vegetable Soup


This is so easy to make and My husband loves it ;) So do I.
I  always make a Big Batch so You can cut this down a bit
It makes 2 6 quart Saucepans almost full ;) 

Buy 2 Cans of V8 or Vegetable Juice
2 Big Cans of Whole Tomatoes
2 Bags of Mixed Frozen Vegetables
1 bag of Broccoli frozen (or you can buy fresh) (if you love broccoli then you can add more but you might need more juice at the end)
1 small bag of Baby carrots 
1 bag of Lima Beans
1 onion ( we buy the big purple onions and I usually use 1/2)
garlic (a couple cloves or more if you desire) (if you do not have fresh garlic than use garlic salt).
Pepper (we grind ours it is so much better taste)
Salt
Sweet Basil or Basil 
Parsley 
6 Large Potatoes
Stalk of Celery

Put 2 6 Quart Sauce Pans on the stove:
Pour one 1/2 can of V8 in each saucepan 
I Cut the tomatoes in smaller chunks - and Add one can in each saucepan. Yes, use the juice from the can also.
Rinse and slice baby carrots in half , add half in each pan.
Rinse Celery and cut in small slices. Add half in each pan.
Add onion, garlic cloves, sweet basil and parsley.
Rinse and cut potatoes in desired chunks. I always leave the peelings on mine.
(Note: I have started to boil the potatoes in a separate sauce pan  until done and then add it in our bowls when I dish the soup up - My Mother had said, she liked it better that way. So now that is how I do it- Taste Great Either Way. Try it both ways and You decide.).
Grind pepper into pans. 
Add a little salt.
Turn on the heat and let that simmer until not quite done
Taste soup the soup broth, does it need a little bit of something?
Add it ;)
Now Add 1 bag of mixed vegetables in each pan
Split the big bag of broccoli in each pan or if you want Add a small bag in each. 
Add Lima Beans
Pour 2nd Can of V8 Over the top of each.
If you need you can add a bit of water, or rinse the bottom of your cans with a little water and pour it in.
Let simmer until the frozen vegetables are thawed and nice and hot.
Taste for flavor, if you need add a bit more pepper or salt.

Note:
(I used to add some Beef Bullion to it but my husband likes it better this way. So do I actually. But it is to your taste).

If you have left overs the next day. Boil a little macaroni til it is cooked, drain and throw it in the pot, adds a little twist to it and the kids will love it.
