Bacon Jalapeno Popper Puffs - How to Make Jalapeno Popper Puffs
Ingredients for about 40 Bacon Jalapeno Popper Puffs:
For the dough:
2/3 cup water
3 tablespoons butter
1 tablespoon bacon fat
1 teaspoon kosher salt (or 1/2 teaspoon fine salt)
2/3 cup all-purpose flour
2 eggs
Then add:
2 ounces extra sharp white cheddar cheese
1/2 cup finely diced jalapeno peppers
1/3 cup finely chopped bacon
pinch cayenne
pinch freshly ground black pepper
- Fry at 375 F. for about 3 1/2 minutes, or until golden-brown and cooked through
For the dipping sauce:
1/2 cup cream cheese
1/4 cup crème fraiche or sour cream
2 tablespoons minced green onions
1 teaspoon fresh lime juice
- add enough water to thin mixture out to proper dip consistency

CHOCOLATE CHIP OATMEAL BARS
CHOCOLATE CHIP OATMEAL BARS
1 cup butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
1 1/4 cups flour
1 tsp soda
1/2 tsp salt
1 1/2 cups oatmeal
1 cup chocolate chips
nuts optional
Cream butter and sugars. Add eggs and vanilla and mix well. Add dry ingredients and chocolate chips. Batter will be thick like cookie dough. Spoon into a 9 x 13 greased and floured pan and pat it down making sure it gets to the outsides of the pan. Bake T 350 for 30 minutes. Do not over bake.
This recipe is not real sweet but it is oh so good
