My Grandmother's Quick Fruit Cocktail Cake

My Grandmother's Quick Fruit Cocktail Cake

This is so easy to make and so good. I remember my Grand Mother finding out company was coming over, so she would mix this up real quick so she had something to server her company.
We always enjoyed this.

Here it is:
Preheat oven 350 Degrees

In a medium mixing bowl:
Add:
1 egg (beat slightly with a fork)
1 can fruit cocktail (do Not drain - use full can)
1 cup flour
1 cup sugar
1 Tsp baking soda

Mix all together with a spoon (no mixer required)
and pour into greased 8 X 8 pan
You can sprinkle brown sugar and cut up walnuts on top if desired.
Bake for 35 minutes.  Tooth picks will be clean and cake beautiful brown.

I personally do not add the brown sugar and walnuts, I just bake it as it is, let it cool and  server it with whip cream on top. It is so delicious!
